One of my favorite things about living in Arizona is being able to grow citrus trees. I picked my last pink lemon this morning. The skin is so cute, yellow with green stripes on the outside, and the inside has a pinkish hue. Lemons are a great way to enhance the flavor of food. Try squeezing the juice over steamed vegetables or salads and add olive oil, fresh garlic, sea salt and pepper. Add the juice to your meat in a marinade, or use it with honey over fruit for a treat. The best part about lemons is that you can make lemonade. If you are having a lemon of a day, I challenge you to make it a lemonade day instead.
